Invisible Trojan?

Does anyone know how to edit the server for sub7 using a hex editor? I want to be able to edit the server so that anti-virus programs do not detect it. The sub7 site offers the idea, but does not go into details. Any s***estions on how to make the server undetectable would be great, whether it is for sub7 or any other trojan programs.
